This is actually the yummiest sweet potato I’ve ever tried! This is vegan and elimination diet friendly. The recipe is from Gwyneth Paltrow’s cook book “It’s all good“. Sweet potatoes are full of beta carotene and vitamins C, A and B6 and they help stabilise blood sugar.
Scrub the potato, prick it a few times and cook at 220 degrees C for 1 hour, turning half way through.
