This is super dooper delicious- really hearty and yummy and feels like it’s full of health. Even the mash is healthy. With each mouthful your body will say mini thank yous! I was a bit put off by the thought of having cauliflower (I normally hate it) but made into mash was good! So it’s a good sneaky way of making myself eat vegetables that I wouldn’t normally like. This is suitable for vegans, detox friendly and is from Gwyneth Paltrow’s It’s all good.
Makes 12 (I just used a baking tray but you can make in cupcake tins if you like)
For the mash
- Coarse sea salt
- 2 parsnips, peeled and chopped
- 1 head of cauliflower, outer leaves and core discarded, roughly chopped
- 1/2 cup of soy milk
- 1 tablespoon extra virgin olive oil
For the lentils (Makes 2 cups)
- 3/4 cup lentils (preferably du Puy)
- 2 tablspoons extra virgin olive oil
- 1 small red onion peeled and finely diced
- 1 carrot peeled and finely diced
- 1 garlic clove inced
- 1 teaspoon finely chopped fresh thyme
- coarse sea salt
- 5 tablespoons tomato paste
- 1 1/2 tablespoons maple syrup
Bring a large pot of water to the boil and add a generous amount of salt. Add the parsnips and cauliflower and cook under they’re tender- around 13-15 minutes. Drain the vegetables and return them to the pot without any heat. Add a teaspoon of salt, the soya milk, oilive oil and crush with a potato masher until smooth.
Combine the lentils with 4 cups of water in a saucepan. Bring to the boil, lower the heat and simmer until they’re soft- about 20 miutes. Drain.
Heat the olive oil in a small saucepan over a medium-high heat and add the onion, carrot, garlic and thyme as well as a pinch of salt. Cook, stirring occasionally until softened- about 10 minutes. Add the lentils, a pinch of salt, the tomato paste, maple syrup and 1/2 cup water. Stir together and let it cook for an additional 5 minutes. Season the mixture with salt and set aside.
Preheat the oven to 176 C.
Line a 12 cup cake tin with paper liners and evenly divide the lentils among them.
Alternatively you can cook the lot in a baking dish. Top the lentils with the mash and bake for 10 minutes, then turn the oven to broil and cook just until the tops are browned.
