Red Kidney Bean Hotpot

Red kidney bean hotpot   This is pretty yummy and healthy. Not as good as Gwyneth’s recipes and you’ll need to add something to this to make it more filling. This recipe is from Carol Vorderman’s “Detox for Life” This is vegan, sugar, wheat and gluten free and detox friendly. Makes 4 servings

  • 2 tablespoons water
  • 1 onion
  • 1 garlic clove chopped
  • 1 red pepper chopped
  • 125g mushrooms sliced
  • 400g can tomatoes
  • 2X 400g can red kidney beans, rinsed and drained
  • 1 teaspoon mixed herbs
  • 250ml vegetable stock
  • 2 teaspoons cornflour

Dry fry the onion, garlic and red peper int he water over a high heat for 3-4 minutes.

Add the mushrooms, tomatoes, beans, herbs and vegetable stock. Stir well and bring to the boil.

Blend the cornflour with a little water to make a smooth paste then stir into the hotpot to thicken the sauce. Simmer for 10 minutes.
