Olive Oil Fried Egg

I’ve never really been bothered about fried eggs- I normally prefer them scrambled but having this olive oil fried egg converted me! This is from Gwyneth Paltrow’s recipe book “It’s all good

  • 2 tablespoons extra virgin olive oil
  • 1 organic free range egg
  • coarse sea salt

Heat the olive oil in a small nonstick pan over high heat. Crack the egg right into the hot oil and sprinkle with sea salt. Cover the pan and cook for just 1 minute (add an extra minute if you like your egg well done). Done!
