Roasted Carrots with Honey and Soy Sauce

These are really yummy without tasting unhealthy and they’re suitable for vegans. This recipe is from Gwyneth Paltrow’s cook book It’s all good

Serves 4

  • 8 carrots
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons manuka or raw honey
  • 2 tablespoons soy sauce

Preheat your oven to 230 degrees C and line a pan with parchment paper.

Bring a large pot of salted water to the boil. Put the carrots in the water and cook until they lose their bite without being too soft (about 5-6 minutes). Meanwhile whisk together the olive oil, honey and soy sauce in a large mixing bowl. Drain the carrots thoroughly, add them to the bowl with the honey mixture and stir to coat them evenly. Transfer the carrots to the sheet and roast stirring occasionally until completely caramelised (about 15 minutes).
