Although the balsamic on the asparagus makes them sticky and delicious the garlic really is too much, you definitely wouldn’t want to be eating it if you were on a first date. I probably would have this again but with a lot less garlic.
Asparagus contains vitamin C, beta-carotene, vitamin E, zinc, manganese and selenium which all help you have beautiful skin. This recipe is suitable for those following the Perricone diet, vegetarians, vegans ands is wheat free, gluten free, sugar free and dairy free and is from Daily Perricone.
- 1lb asparagus
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon minced garlic
- 1/2 teaspoon black pepper.
Preheat the oven to 220 celsius, trimthe asparagus and place in a flat pan. Drizzle the olive and vinegar and sprinkle the salt, garlic and pepper over the asparagus and toss to coat. Bake for 10 minutes turning once.
Serve with your favourite lean protein (salmon for me!).
