Almond-Encrusted Wild Salmon Fillets

This is a good alternative to walnut crusted salmon fillets and the recipe also differs a bit (other then just using different nuts). This tastes really good and the almonds makes the fish more satisfying. This recipe is suitable for those following perricone and is wheat free, gluten free and dairy free


  • 1/2 cup coarsely ground almonds
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon grated organic lemon zest
  • Sea salt and fresh pepper
  • 2X 6oz wild salmon skinless fillets
  • 2 tablespoons extra virgin olive oil
  • Lemon wedges

Grind the almonds in a coffee grinder or food processor. Mix the ground almonds, parsley, grated lemon zest, salt and pepper on a plate. Dry the salmon and roll it in the mixture. Heat the oil in a large pan over a medium heat. Add the salmon and cook for about 5 minutes on each side then serve.
