Savoury Scrambled Eggs with Mushrooms and Chives

This is definitely filling, while it’s not disgusting, I actually didn’t find it that nice either. This recipe is Perricone friendly, suitable for vegetarians and is sugar free, wheat free and gluten free.

Makes 4 servings


  • 1 tablespoon olive oil
  • 1/4 cup finely chopped mushrooms
  • 1/4 cup chopped chives
  • 1/4 teaspoon ground turmeric
  • 4 eggs beaten
  • Black pepper to taste
  • Sea salt to taste

Heat olive oil in a medium pan. Saute mushrooms for 3 minutes, add chives and cook for another minute until fragrant. Add eggs and black pepper. Cook the eggs over a low heat, stir constantly. Add the salt and scramble for a few seconds then serve.
