Raspberry and Blueberry Mousse

photo (17)This is more like fruity sludge than mousse. Maybe it could do with chilling for longer or more tofu.  Even though the consistency is wrong it’s still a delicious tasting healthy dessert. The blueberries are rich in phytonutrients and have the highest antioxidant capacity of all fresh fruit. Both blueberries and raspberries are rich in vitamin C. This dessert is also a good source of protein and calcium. This recipe is vegetarian, vegan, wheat free, gluten free and dairy free. This is from Carol Vorderman’s cookbook “Detox recipes“.

Makes 4 servings

  • 125g blueberries
  • 225g raspberries
  • 300g silken tofu
  • 2 tablespoons clear honey

You can save a few of the berries for decoration. Put the rest of the fruit in a blender with the tofu and honey and blend until smooth. Divide into 4 individual bowls. Chill in the fridge and serve.
