The mint makes this salad taste really fresh, the juice is really nice with the lime. I really like strawberries but I’m not as keen on melon, so thankfully the juice disguises the taste. The melon is rich in betacarotene and the strawberries and lime are rich in vitamin C. This recipe is wheat free, gluten free and dairy free and is suitable for vegetarians, vegans and those following a detox. This recipe is from Carol Vorderman’s “Detox Recipes”.
