This isn’t actually as nice as you think it would be. The vanilla makes it taste a bit weird, as if you’re having vanilla ice cream (which I don’t like) (because it’s cold and thick as well). I think the pineapple and coconut smoothie tastes a million times better so choose that instead. On the plus side coconut milk is low in calories and almost fat free and the mango is rich in betacarotene. This drink is from Carol Vorderman’s “Summer Detox” and is wheat free, gluten free, dairy free and sugar free and suitable for vegetarians, vegans and those on a detox.
Makes 2 drinks
- 6-10 ice cubes
- Mango, skinned, stone removed and chopped
- 250ml coconut milk
- A few drops of vanilla extract
Put the ice in the blender and blend until slushy, add the remaining ingredients and blend until smooth.
