Baked Bananas

photo (29)This smells delicious, the bananas have an amazing consistency- nice and mushy and warm. The spices and the warmth seems to intensify all the flavours- even the raisins taste amazing! This is really comforting and good. This recipe is wheat free, gluten free and dairy free and is suitable for vegetarians, vegans and those following a detox. This recipe is from Carol Vorderman’s “Detox for Life”.

Makes 4 servings

  • 4 large bananas
  • 2 tablespoons water
  • 2 tablespoons manuka honey of maple syrup
  • 1/2 teaspoon mixed spice
  • 60g raisins
  • 1 teaspoon lemon juice

Slice the bananas into 1 inch chunks. But in a baking dish and combine with the remaining ingredients. Bake at 200C for 15 minutes.
