Za’atar Roasted Carrot and Avocado

IMG_4703This is actually surprisingly nice! It’s sort of like a pancake with a bit of a kick, or more like a guilt free pancake. This like a miracle for me because being on Perricone I really don’t have that many carby things or at least anything that could resemble bread or something that I could put stuff on, even though it does resemble bread in that it’s solid and you can put things on it it’s really light and doesn’t leave you feeling heavy. This recipe is wheat free, gluten free, dairy free and suitable for vegetarians and vegans. This is from Gwyneth Paltrow’s “It’s All Easy“.

Makes 2 Socca Pizzas

  • 4 small carrots
  • Olive oil
  • Sea salt
  • Za’atar
  • 2 Socca pancakes
  • 1/2 avocado, sliced
  • 2 tablespoons chopped fresh coriander
  • Juice of 1/2 lime

Preheat the oven to 200 C.

On a baking sheet, toss the carrots with 2 tablespoons of olive oil, a pinch of salt and a pinch of za’atar. Roast for 20 minutes or until the carrots are nicely browned and tender.

Halve the roasted carrots, arrange them over the socca, then top with sliced avocado and the coriander. Sprinkle with extra sea salt and za’atar and squeeze fresh lime juice over it all.
